Food is a central part of life here in Georgia. Sometimes to a ridiculous extent. No social gathering is complete without a meal, and no meal is complete without liquor. Having spent centuries eating and drinking on every available occasion the Georgians have perfected some incredibly dishes. Georgian food isn’t widely known, but it’s been one of the treats of living here. Today I’m going to share the recipe for my all time favorite meal-აჭარული ხაჭაპური or Ajaruli khachapuri.
Khachapuri is a staple of the Georgian diet- it’s basically a combination of bread and cheese cooked together. Within Georgia different regions have their own kinds of khachapuri, some better than others. Adjaruli from the region of Adjara is probably the least healthy and the best tasting. While searching for recipes I stumbled across another blog called Georgian Recipes which has a fantastic recipe for Adjaruli khachapuri and much more. If you are interested in Georgian food, and you should be, check it out. Most of it is fairly easy to make.
As for the khachapuri here is the recipe. Georgian Recipes did such a good job explaining it that I don’t really have anything to add. All I can say is that once you try this you will wonder how you lived without it.
